Caption | There are three classes of tequila, based on age; blancos or platas, the youngest and rawest –some would say purest-, then reposados-rested and añejos-aged, the smoothest and oldest. The one factor to look out for when choosing a tequila, whatever the style, is that it is made from 100% blue agave. By law the drink only has to have 51% of its alcoholic content derived from the agave to be called tequila, but always check the label to make sure you know what you’re getting. If it’s 100% pura de gave, it’s clearly marked. |
